Frozen cranberries retain all their valuable properties, which can be used to treat various diseases. Fruit drinks, compotes, kissels and pie fillings are prepared from frozen cranberries.
It is necessary to use all the cranberries that have been defrosted immediately. Since the berries cannot be re-frozen, it is advisable to store them in small bags in the freezer and take them out as needed.
Frozen Cranberry Recipes
Frozen cranberries are as healthy as fresh ones. Because they retain all their properties and healing qualities. This is very valuable, because in winter, taking the berries out of the freezer and making something tasty and healthy from them is a good alternative to going to the pharmacy.
Recipes from frozen cranberries are very diverse. Almost everything that is recommended to be prepared from fresh cranberries can also be made from the frozen product.
Recipe No. 1 – salad with cranberries, carrots and cabbage.
The ingredients you will need are half a glass of cranberries, two carrots, a quarter of a head of white cabbage, and a third of a glass of low-fat sour cream.
The berries are taken out of the freezer and put into a colander to drain off any excess liquid. The cabbage is shredded and the carrots are grated on a medium grater. All ingredients are combined, then salted to taste and seasoned with sour cream.
Recipe No. 2 - lightly salted herring with cranberries.
You need to stock up on 600 grams of lightly salted herring (or one piece), 140 grams of cream cheese, 1.5 teaspoons of gelatin, one handful of cranberries, two pieces of boiled beets, three sprigs of fresh dill.
The dish is prepared as follows. The fish is cleaned and cut into fillets, the bones are removed. Gelatin is soaked in three tablespoons of water and left to swell. The cranberries are taken out of the refrigerator and defrosted. After this, the gelatin is mixed with the cheese. Dill is chopped into small pieces and added to the cheese mass together with the cranberries. That's it, the filling is ready.
Take some cling film and put one piece of fillet on it, then spread the filling evenly on top and cover everything with the second piece of fillet. Moreover, the pieces of fish should be placed in such a way that it looks like a whole fish. Then the herring should be tightly wrapped in cling film and put in the refrigerator until the morning.
During this time, you need to boil two beets and cool the vegetables. After that, the beets are cut into circles. The herring is taken out of the refrigerator, the film is removed, and the stuffed fish is also cut into circles - portions. Then a piece of herring is placed on a piece of boiled beets, the snack is fastened with a skewer and placed on a dish. In this way, you need to fasten all the pieces of beets and herring.
Recipe No. 3 – cottage cheese casserole with cranberries.
You need to take four hundred grams of crumbly cottage cheese, three eggs, three tablespoons of semolina, three tablespoons of sugar, one hundred grams of frozen cranberries.
The cottage cheese and sugar are put into a deep bowl and mixed with a fork. Then eggs are added to the cottage cheese mass, and everything is mixed with a mixer or blender until smooth. You should get a liquid mass with a beige tint. Frozen cranberries are added to the bowl and everything is mixed again, this time with a fork.
The oven is heated to a temperature of one hundred and eighty degrees, the dough is placed there in the selected dish for fifteen to twenty minutes. After the allotted time, the casserole is removed from the oven and cooled.
Frozen Cranberry Juice
Mors from frozen cranberries is as healthy a drink as mors from fresh berries. After all, cranberries do not lose their valuable properties, even when exposed to low temperatures.
Here is a recipe for fruit drink made from frozen cranberries.
Take half a kilogram of berries, two liters of water and two hundred to four hundred grams of sugar. Take the cranberries out of the freezer and put them through a juicer. Pour the resulting juice into a pan with water, then add sugar. Then bring the drink to a boil, simmer for ten minutes, then remove from heat and cool. If the fruit drink is sour enough, you can add honey to it, thoroughly mixing the product in the drink. It is necessary to clarify that honey can be added to the hot liquid only after its temperature drops to seventy degrees and below.
