The quality of Ukrainian-made sushi shocked experts
Last reviewed: 01.07.2025

The quality of Ukrainian-made sushi, which quickly won the hearts and stomachs of Ukrainians, shocked experts - it turned out that they conceal a terrible danger.
As the program "Groshi" found out, E. coli was found in most of the sushi samples tested by Ukrainian experts, TSN writes.
"We did two sushi tests, one test we took from sushi from restaurants, the second - sushi with delivery. In both tests the results were really terrible. E. coli was found in most samples. This indicates that this product was produced in unsatisfactory sanitary conditions. Or it was stored incorrectly," said Nina Kildiy, head of the expert-analytical department of the independent consumer expertise center "Test".
E. coli can have a strong impact on the human body. "The symptoms increase over two or three days, do not go away, and the temperature rises. When E. coli gets into the urogenital area, it can cause inflammation, often chronic cystitis," said gastroenterologist Inna Pavlik. Ukrainian sushi producers also violate the requirements for storing fish, the main ingredient in sushi. "Histamine is a substance that accumulates in fish if it is stored for a long time. We had violations regarding this substance as well. Some samples that were submitted for tasting contained hair," said Nina Kildiy.
"There was even one outrageous case when we came to a very famous chain of restaurants that serves sushi, and they sold us a completely stale sample. The smell was terrible," the expert said. However, unsanitary conditions can leave behind more than just a smell.
"In practice, there have been cases of dysentery when eating sushi, and food poisoning. There may be complications with intestinal rupture, bleeding and then ulcers on the wall," said doctor Inna Pavlik. Ascaris, toxocara, opisthorchiasis - these are exotic names for types of sushi.
Worms in raw fish are a common occurrence. "Worm infestation is very common today. There is such a dangerous type of worm as echinacoccus. Echinacoccus affects the liver, lungs, it can create entire cystic formations, multiply and is very difficult to remove from the body," says the doctor. Therefore, you should try to eat sushi only in trusted places. Although, according to the experience of experts, there are not many of them. "In Ukraine and in Kyiv, you need to be very careful with products such as sushi. I will say honestly, I would not advise eating anything made from raw fish," advised Nina Kildiy.
If you love sushi so much, you can't give it up, then doctors advise eating it not from raw, but from processed fish - boiled or smoked. Or the best option is to cook it yourself.
