Recipes for a diet for pancreatitis, that is, for inflammation of the pancreas, involve preparing dishes taking into account those products and methods of their culinary preparation that are recommended for this disease.

In case of pancreatitis, following diet 5 is the most important factor in improving well-being and treatment outcome. Therefore, a special diet was developed for this disease - 5p, which has two options: for the stage of exacerbation of pancreatitis and for the stage of its weakening (remission). But in any of them, the main thing is to injure the pancreas and the entire digestive system as little as possible mechanically and chemically.

First, let's remember which foods should be excluded when using the recipes for diet 5 for pancreatitis. These are fatty meat, fish and poultry, as well as broths based on them; all offal; mushrooms and mushroom broth; sweetened dairy products with a high percentage of fat; whole eggs (hard-boiled); legumes. It is forbidden to eat white cabbage, radish, radish, onions and garlic, eggplants and sweet peppers, cucumbers, tomatoes, spinach and sorrel.

The recipes for a diet for pancreatitis will have to be embodied in ready-made dishes without the use of spices, tomato paste, lard or lard. Fried, stewed, smoked foods are prohibited (boiled and steamed are ok), and all spicy and sour foods are taboo. Of the pasta products, only vermicelli is used. It is strictly not recommended to eat raw whole fruits and berries, and porridge should not be crumbly, but like a mush (semi-viscous and mashed) in milk mixed with water. To prepare this soup, you need to take the following products: a medium-sized cauliflower inflorescence, two potatoes, a small carrot and a small onion.

The cabbage should be separated into small florets, kept in cold salted water for about 15 minutes, and then washed (this will get rid of all the "residents" that may be in the cabbage). Peel the potatoes, carrots, and onions. Place the diced potatoes, cauliflower florets, onion (whole) and grated carrots in boiling water (1.5 liters). Boil the vegetables in salted water for 15-20 minutes, remove the onion and discard. Remove everything else from the broth, chop with a blender, and place back in the pan with the vegetable broth.

After boiling, the soup is brought to readiness for several minutes (while stirring) and seasoned with a small piece (20 g) of butter. When serving, you can put a teaspoon of low-fat sour cream in the plate.

Carrot soufflé

To prepare this dish, you will need about two glasses of raw grated carrots, raw whites of two eggs, 80 g of granulated sugar and half a glass of milk.

Pour boiling water over the carrots and cook until soft, put in a sieve and rub until a homogeneous mass is obtained. Then cool slightly.

Beat the egg whites into a stiff foam. Add sugar, milk and carrot mixture. Mix everything thoroughly and place in a baking dish greased with butter. Place the dish on a deep baking tray with water and put it in a hot oven.

The soufflé will be cooked at a temperature of about +180ºС for 30 minutes.

Diet recipes for acute pancreatitis

Before giving recipes for a diet for acute pancreatitis, it is worth recalling that this dangerous disease is accompanied by acute abdominal pain, nausea and vomiting. And intoxication and vomiting lead to dehydration and complete disruption of the digestive system.

So, in the first three days, patients are supposed to fast and only drink still mineral sodium hydrocarbonate water, little by little and in small sips - Luzhanskaya, Polyana Kupel, Polyana Kvasova or Borjomi. Then, diet 5p of the first option is prescribed (for the acute stage of pancreatitis). With an average caloric content of 2600 kcal, the daily diet should include at least 80 g of proteins (40 g of animal origin), 50 g of fats (a quarter of which is also of animal origin) and about 200 g of carbohydrates (sugar - 25 g per day). Dishes should be liquid and semi-liquid (mashed and finely chopped) and only boiled or steamed, and during the first week - without salt.

After a week from the onset of the above symptoms, the main recipes for a diet for acute pancreatitis are cereal mucous soups, semi-liquid porridges (except pearl barley, barley and millet), meat and fish steamed cutlets and soufflés, potato, pumpkin or carrot puree, and kissels. You can eat low-fat kefir and cottage cheese.

Oatmeal soup

To prepare slimy oatmeal soup, it is better to take Hercules flakes - about a glass per 1.3 liters of water. The flakes are poured into boiling water and cooked over low heat for at least 30 minutes (until completely boiled). The resulting mass should be filtered, the broth boiled and removed from the stove.

Next, the soup needs to be seasoned with an egg mixed with milk: a beaten raw egg is poured into 100 ml of hot boiled milk and mixed well. The resulting mixture is poured in a stream - with constant stirring - into the oat broth and a teaspoon of butter is added.

Meat soufflé

Ingredients required: 450 g lean beef (or chicken fillet), 200 ml milk, 80 g low-fat cream and 2 raw eggs.

Pre-cooked meat is minced, eggs, milk and cream are added. Everything is thoroughly mixed until smooth. Before putting the resulting mass into the form, it must be greased with butter. The soufflé is cooked in the oven at a temperature of +190ºС for about 35 minutes.

Strawberry Kissel

For 1 liter of water you will need 300-350 g of fresh strawberries (peeled and washed in running water), 2 tablespoons of granulated sugar, a heaping tablespoon of potato starch.

While the water for the jelly is boiling in the pan, the strawberries should be rubbed through a sieve. Separately, the starch is stirred in 100 ml of boiled water at room temperature. As soon as the water in the pan boils, you need to put the mashed strawberries and sugar in it, mix well and bring to a boil again. The last step: while constantly stirring, you need to pour the starch diluted in water into the pan. After this, the jelly should be boiled for no more than 2-3 minutes, otherwise it will be too liquid. In the same way, jelly is cooked from any seasonal or freshly frozen berries, only frozen berries will have to be boiled a little first and only then rubbed or chopped with a blender.

Cottage cheese dessert with banana

This dessert is prepared very quickly just before eating: 100 g of low-fat cottage cheese and half a ripe banana are ground in a blender until smooth. You can add half a teaspoon of powdered sugar and the same amount of soft butter.

The result is a dietary breakfast or afternoon snack that can be combined with weak tea, rosehip infusion or dried fruit compote.

Diet recipes for chronic pancreatitis

The following recipes for a diet for chronic pancreatitis take into account the nutritional characteristics of patients during the remission period of this disease. The daily caloric content of the menu should not exceed 2700 kcal and include 140 g of proteins, no more than 80 g of fats, about 350 g of carbohydrates. Per day, it is allowed to consume 40 g of sugar and 10 g of table salt, as well as 1.5 liters of liquid (excluding first courses).

Creamy Zucchini Soup with Chicken

For 1 liter of water, take a small zucchini, a couple of medium potatoes, 2 tablespoons of raw grated carrots, a few sprigs of dill and 150 g of pre-cooked chicken fillet. Peel the potatoes, peel the zucchini and remove the seeds. Finely chop the vegetables and put them in a saucepan with boiling salted water. Put the carrots there too.

The cooking process lasts for about 20 minutes. Then the vegetables are removed from the broth, chopped and returned to the pan. After the soup has boiled again, boiled chopped chicken and a small piece of butter are added. Cook for another 10 minutes.

Steamed fish on a "pillow"

You need to take a fillet of white sea fish (cod, halibut, hake), defrost it, wash it and thoroughly remove excess moisture. Put raw zucchini cut into long slices on the bottom of the steamer, put the fish fillet on it, add a little salt and a sprig of dill - for the smell. Close the steamer and turn it on for 20 minutes.

If desired, you can prepare a side dish from the zucchini “pillow” along the way – zucchini puree: just chop the steamed zucchini with a blender or fork, and then season with vegetable oil.

Rice porridge with apples

For a glass of rice, you need to take a glass of milk, one large apple, a tablespoon of sugar, 20 g of butter, a little salt and ground cinnamon. To make the porridge the right consistency, that is, corresponding to the recipes of the diet for acute pancreatitis, the washed cereal should be put not in boiling water, but in cold water. This is the main principle of preparing semi-viscous porridges.

Add a little water - so that the rice is covered with water by a couple of centimeters. As the porridge cooks, add salt, milk and about 10 minutes after it starts boiling, add a fresh apple, previously peeled and grated on a coarse grater, and ground cinnamon (on the tip of a knife) to the pan. By the way, if you don't like the aroma of cinnamon, you can leave it out. After the cooking process is complete, cover the pan with a lid and let the porridge "simmer" for 10 minutes.

As you have seen for yourself, the given recipes for a diet for pancreatitis are not difficult to prepare, the main thing is to strictly adhere to the fundamental principles of nutrition for this disease.
