Healthy Eating: Beets will become an ingredient in burgers

Nutritionists from the Aberdeen Institute (Scotland) have developed a personal burger recipe containing beetroot extract. Scientists have already proven that beetroot is rich in antioxidants and does not prevent the body from absorbing “bad” fat.
When fatty foods are consumed, oxidation processes occur in the stomach, during which fats are transformed into potentially dangerous compounds and absorbed by the body. These substances may be associated with the development of cancer and heart disease.
Scientists have tried to find out whether vegetable extract added to grocery products really prevents oxidation and absorption of "bad" fats. It is worth noting that beets are also useful because they lower blood pressure.
After testing many different vegetable extracts, experts found that the combination of turkey and beets gave the burger a good taste and guaranteed the same look as a simple sandwich.
Scientists are currently recruiting men aged 21 to 60 to participate in the study. Participants will have to eat turkey burgers that either have beets added or not, and scientists will find out which substances from the food will be absorbed by the body. If it turns out that beet extract in finished products actually prevents the absorption of "bad" fats, both consumers and manufacturers will benefit. According to the authors of the study, adding vegetable extract to products slows down the oxidation process, which prolongs the life cycle of products on the shelf.
